KRUSHEVO CAKE (CHOCOLATE CAKE WITH WALNUTS)

When my mother gave me the recipe for this cake, the first reaction was that this could not be the correct name - KrushevŠ¾ cake. A cake with 450 g of walnuts can not come from a Vlach place :) But let's keep it. This cake was made for my aunt's 70th birthday :)


For the biscuit:
  • 8 egg whites
  • 250 g of sugar
  • 200 g of chopped nuts
  • 4 tablespoons of flour
  • 3 tablespoons oil
  • 1/2 packet baking powder (5 g)
  • 100 g grated chocolate
For the filling:
  • 8 egg yolks
  • 250 g of sugar
  • 1 margarine (or unsalty butter)
  • 1 cup hot milk
  • 250 g of crushed nuts
  • 100 g of chocolate
For decoration:
  • 2 whipped chocolate creams


Preparation:

  1. For the biscuit: Using a mixer, mix sugar and egg whites well. Add the remaining ingredients and mix with a wooden spoon. The mixture is poured into a larger baking tray aligned with baking paper and baked at 200 C degrees for about 20 minutes. Then the baked biscuit, after cooling, is divided into 3 lanes.
  2. The filling is prepared as follows: the yolks together with the sugar are steamed nicely. On the side, the milk is heated and we add the walnuts and the chocolate. Chocolate can also be added to the yolks, it's the same. In another container, margarine is beaten until foamy. Once the yolks and walnuts cool down, they are mixed together with margarine until the mixture becomes homogeneous.
  3. One third of the filling is applied to the first lane, the second third to the second lane and with the rest of the filling we cover the whole cake.
  4. Decorate with whipped chocolate cream or optional.
