Fits classically cheesy – and I’m not talking about my humor.
Really people, every combination of zucchini and garlic is heavenly! Plus we add more veggies to create these healthy rolls that are super tasty.
Ingredients ( for about 12 rolls)
Vegetables & Cheese:

1 medium zucchini, grated (salted & drained)

1 medium carrot, grated

1 small potato, grated

2 cloves garlic, minced

2 spring onions or a handful of parsley, chopped

2 eggs
-
100 g mixed cheese, grated (e.g., mozzarella + cheddar)

Salt, pepper, Italian herbs, paprika to taste

4 tbsp oats + 2 tbsp flour (binders of the vegetable mafia)
For Frying / Baking:

Olive oil or butter (for brush-frying or baking crust)
Cucumber Dip (optional):

1 tbsp sour cream + 1 tbsp mayonnaise

¼ cucumber, finely diced

Pinch of salt (perfectly balanced, like your content tone)
Instructions

Prep Your Veggies:
Grate zucchini, carrot, and potato. Add salt to zucchini, let stand 10 min, then squeeze dry - nobody wants soggy rolls. -
Mix the Magic:
In a bowl, combine all grateables, cheese, garlic, herbs, eggs, oats, and flour. The mixture should hold together when squeezed. Adjust seasoning. -
Roll & Fry/Bake:

Option A – Pan-fry: Form small log-shaped rolls. Heat oil in a skillet over mid-heat, cook ~3–4 min per side until golden.

Option B – Bake: Press mixture into small rolls, brush with olive oil on baking tray. Bake 180 °C / 350 °F for 20–25 min until golden.

Cucumber Dip:
Mix sour cream, mayo, cucumber, and pinch of salt. Chill for a crisp contrast to cheesy rolls. -
Serve & Brag:
Garnish with parsley. Place warm rolls alongside dip. Ideal for snacks, appetizer spreads, or topping your fame.
