Usually when we make kifli, the recipe requires 1 whole butter or margarine (250 g). This recipe contains only 90 ml of oil and still kifli are very soft, spongy and tasty. I guarantee you'll love them. The dough is easy to handle.  I usually prepare it in the morning and form kifli after couple of hours.
  • 1 fresh yeast (40 g)
  • 150 ml of yogurt
  • 150 ml of milk
  • 90 ml oil
  • 1 tsp salt
  • 1.5 tsp sugar
  • 1 egg
  • about 600-700 g flour
  • pinch of baking powder
  • 1 egg  and a little sesame seeds for coating
  • filling is optional, I put ricotta cheese
  1. In the warm milk we dissolve yeast and sugar. No need to activate it.
  2. Then we add the baking powder, salt, egg, yogurt and oil.
  3. With a spoon we combine all the ingredients.
  4. We start to gradually add flour and knead by hand until we get smooth and non-stick dough.
  5. Cover the dough and let it rest for  1 hour
  6. Then we split it into two parts.
  7. From each section we make a circular crust. Cut the circle in triangles as in picture and put the filling on the wider part and roll.
  8. Align kifli on a pan coated with baking sheet, coat with an egg and sprinkle sesame seeds.
  9. We leave them on a warm place to rise for 30 minutes.
  10. We bake in a heated oven at 180-200 for about 20-25 minutes. After baking, I coated each with a bit of melted butter.
  11. We serve hot.
