LEAN CHERRY TART (FLOUR AND OIL FREE)

A wonderful dessert that will delight you with the simplicity, taste and appearance. At first I was skeptical about how it would turn out and I was eagerly waiting to cool it down to cut a piece and try it. Beautiful, juicy and mouth melting! This cake can be super-healthy because the essential ingredients are healthy, just replace the sugar with stevia or honey and the fruit can be fresh or frozen  You can use peaches, plums, apples etc.

Ingredients:
 
For the base
  • 200 g oat flakes or mixed cereal flakes
  • 100 g crushed walnuts or hazelnuts
  • 100 g of sugar (preferably brown)
  • half a packet of baking powder (5 g)
  • 1 teaspoon cinnamon
  • a pinch of ground cardamom
  • 100 ml orange juice (1 orange)
  • 100 ml warm water
For filling
  • 1 jar sour cherries compote
  • 1 sachet vanilla sugar 10 g
  • 1 full spoon pudding of vanilla or starch
  • 2 tablespoons brown sugar

Preparation:
  1. First prepare the filling. Place the compote in a pot to boil, take a little liquid to dissolve the pudding or starch aside. Let it boil for 10 minutes with sugar, and squeeze the sour cherries with a chopper during boiling. Finally, add the dissolved pudding and let it thicken by constant stirring. Pull the pot on the side.
  2. Prepare the base, blend the flakes in a blender briefly, but don't turn them into flour. I used mixed cereal flakes. Pour them with warm water and orange juice and mix.
  3. Then add crushed nuts, sugar, baking powder, cinnamon and cardamom and mix nicely.
  4. Place the resulting mixture in a baking pan, about 25 cm wide, meaning it is not too large, coated with baking paper. Align the mixture nicely and then add the fruit filling and spread it nicely. 
  5. Place the pan to bake at 180 C degrees for about half an hour. After roasting, you can sprinkle crushed hazelnuts or walnuts on top. Let it cool down before serving and cutting.
