PERFECT BAKED ZUCCHINI BURGERS

 I made up this recipe myself and I ate all 9 burgers myself hehehehe. I previously published a recipe for a fried version, but for some time now I have been looking for a way to make them baked and still be delicious. I must say that the baked version is much better than the fried one and if you make them according to my instructions, yours will surely turn out just as good as these. The most important thing in making zucchini burgers is their squeezing, the less water they contain, the faster they are made and the inside will bake nicely and quickly. The recipe is for 1 zucchini.

Ingredients:

  • 1 grated zucchini (medium size)
  • 2 smaller eggs (I used village eggs)
  • salt for salting grated zucchini
  • a little black pepper
  • 1 tablespoon chopped fresh parsley
  • 100 g grated feta cheese
  • 3 tablespoons breadcrumbs
  • 2-3 cloves of chopped garlic
  • 1/4 head of chopped onion
  • 1 tablespoon flour
  • 1 tablespoon sesame seeds
  • half a teaspoon of baking powder (and not necessarily)
  • a little olive oil for coating
 

Preparation:

  1. First, grate the zucchini (on the large holes on the grater) and salt it. 
  2. Put the grated zucchini in a large piece of gauze or kitchen towel and wrap it. After about 10 minutes, start squeezing so to release the water out of the zucchini. Leave it for a few more minutes and drain again, you will be surprised how much water is released. 
  3. Drain as well as you can, then transfer the zucchini in a deeper bowl. Add all the rest of the ingredients, mix well with a spoon and check the density of the mixture. If needed, add 1-2 tablespoons of flour.
  4. Place baking paper on a baking tray and lightly grease it with oil. 
  5. Take from the mixture with a spoon and put 1 full tablespoon on the greased baking paper, shape and even the burger. I made 9 burgers with this amount. 
  6. Add a little oil on top of the burgers and put to bake at maximum heat in a previously heated oven for 10 min, then turn them over to bake for a few more minutes. Since most of the water is released, burgers are baked very quickly, so be careful not to burn them.
  7. Combine with fresh tomato.
