A beautiful lemon cake from my friend Daniela that goes excellent with your morning coffee. The recipe is Italian, though this kind of cakes are made all over the world. If you are fond in citrus fresh aromas in desserts, then, this is a recipe for you.

  • 4 eggs
  • 1 cup liquid yogurt
  • 2 cups sugar
  • 2 cups flour
  • 1 cup corn starch
  • 1 cup (not full) oil
  • 1 sachet baking powder
  • 1 grind lemon zest
  • juice from half lemon

*cup size 150 ml

  1. First whisk egg whites separately with a pinch of salt.
  2. Then whisk egg yolks together with the sugar, add yogurt, then the oil, and lemon juice and zest in the end.
  3. Separately mix flour, corn starch and baking powder and gradually add them to the egg yolks mixture. Stir with a wire. Then add the egg whites mixture and stir everything well.
  4. Pour the mixture in a mold (No.26) coated with butter and flour and bake at 180 C degrees for about 40 minutes.
  5. After baking, leave to cool well, then sprinkle with powdered sugar or make royal icing.
