MEDICINAL SALAD (IMPROVED RECIPE)

The medicinal salad is a true ally during the cold months. It’s a simple, healthy, and flavorful winter relish with a spicy kick. Traditionally, it’s made only with hot chili peppers, but this version adds a personal twist for extra balance and taste.
Those who prefer milder flavors can replace the chili peppers with sweet ones for a lighter version. From this quantity, six 500-ml jars and two smaller ones are obtained.



Ingredients:
  • 2 kg of carrots
  • 1/2 kg of red hot long chili peppers (I put rezha-vezeni)
  • 1,5 kg of sweet peppers
  • 1 bunch parsley
  • 1 head garlic
Liquid ingredients:
  • 1 cup salt
  • 1,5 cup sugar
  • 450 ml wine vinegar
  • 400 ml oil
  • 2 tablets crashed aspirin
  • 1 sachet food preservative {5 g)
 * cup size is 150 ml

Preparation:
  1. First prepare the liquid so the ingredients can dissolve. Stir occasionally.
  2. Peel carrots, boil for 10 minutes, drain and cut into circles.
  3. Bake peppers shortly and cut into pieces or circles.
  4. Wash and chop parsley and garlic..
  5. Put all these ingredients in a deep pot and mix everything nicely.
  6. Then pour the prepared liquid. Mix everything well and let the salad stand for 24 hours.
  7. Then collect the salad in well washed and dried jars and place in a dark and dry place.
  8. Consume after several days and during winter time. 
*Note: you don't need to bake all sweet peppers, you can put them like that. This time, I baked the chilly peppers and some of the sweet peppers. I put 1 kg of sweet peppers unbaked.
I collected the salad in the morning-after 12 hours.
I consumed half jar in the evening - the salad was ready.
