CHERRY BUNDT CAKE

A simple bundt cake recipe, my favorite combination with cherries, vanilla and powdered sugar mmm. I made it and gave it as a gift for Easter, so I don't have many photos. But it is beautiful, juicy, melts in your mouth.

Ingredients:

  • 4 eggs
  • 150 g (5.3 oz) sugar
  • 70 g (2.5 oz)  melted butter
  • 150 ml (2/3 cup) thick yogurt
  • 12-14 tablespoons flour
  • 2 teaspoons vanilla extract
  • 2 tsp baking powder
  • 400 g (14 oz) cherries
  • 1-2 tablespoons semolina
  • powdered sugar on top

Preparation:

  1. Beat the eggs with the sugar and gradually add the butter, yogurt, vanilla. Then add one by one spoon of flour and mix with a wooden spoon, when you reach the 12th you will assess if there is a need for some more flour. Add the baking powder and mix.
  2. Mix the cherries with a little powdered sugar and 1-2 tablespoons of semolina.
  3. Then in a greased bundt mold, arrange a few cherries and add some of  the filling. Add some cherries, then from the filling and so on until the end.
  4. Bake for about half an hour at 180 C (350 F) degrees.
  5. Once cool, take it out of the mold and sprinkle with powdered sugar.

Cheers.
