LEAN SYRUP CAKE WITH APPLES AND WALNUTS (no oil)

 A delicious cake that doesn't feel as lean at all. It is made quickly, and even the ingredients can be mixed with a spoon. The cake is juicy without the syrup because the apples themselves give juiciness, so it can be prepared without the syrup. Basically, all lean cake recipes are simple and you can use them even if you're not in a fasting period.

Ingredients:

  • 15 tablespoons sugar
  • 2 teaspoons vanilla extract
  • 20 tablespoons of mineral water
  • 6 grated apples
  • 250 g semolina (8.8 oz)
  • 1 teaspoon baking soda
  • 20 flat tablespoons of flour
  • 2 tsp baking powder
  • 100 g chopped walnuts (3.5 oz)
  • 1 teaspoon cinnamon

Syrup:

  • 500 g sugar (17.5 oz)
  • 500 ml of water (2 cups)

Preparation:

  1. Mix all the ingredients with a mixer for better combining, adding the ingredients one by one, and pour the mixture into a floured baking tray 30 by 40 cm, and if you want the cake to be taller, use a smaller tray. Bake for about 30 minutes at 200 C (390 F) degrees.
  2. If you don't want a very sweet cake, you can skip the syrup and just sprinkle cake with powdered sugar on top. Otherwise, prepare syrup by boiling sugar and water for 10 minutes.
  3. Then, when cake cools to a lukewarm temperature, cut in cubes and pour the lukewarm syrup over.
  4. Garnish with coconut flakes and walnuts.
