COCONUT/CHOCOLATE SNOWBALLS

Similar to Bounty, but much healthier, you'll fell in love with these snowballs, especially if you're a coconut lover. They don't require much preparation time, many ingredients or do mess in the kitchen. These are no baking sweets, so you can freely make them in summer when we don't want to use the oven very often.

Ingredients:

  • 1 3/4 cups unsweetened shredded coconut
  • 3 tsp coconut oil
  • 3 tbs maple syrup
  • 2 tbs milk (or coconut milk would be perfect)
  • half a teaspoon vanilla extract
  • a pinch of salt
  •  dark chocolate for glaze about 200 g

Preparation:

  1. Put half of the coconut and 3 tsp of coconut oil in a blender or a food processor. Blend at high speed until it becomes to get buttery consistency.
  2. Add the maple syrup, milk, vanilla extract, and salt and blend at high speed until everything is well combined.
  3. Add the rest of the coconut and blend again to unite the ingredients.
  4. From this mixture, form balls and put them in the fridge for several hours.
  5. Later, prepare the chocolate glaze and dip each coconut ball into the melted chocolate and arrange on a wire rack or a parchment paper. If you like more milky taste, use milk chocolate.
  6. Refrigerate the snowballs again.
  7. That's it. Enjoy!
