These bagels come from the Turkish cuisine and are a real hit on the internet, so I had to try them. I didn't expect them to be so soft, so tasty, so mouth melting. You can add olives, cheese, wrap them in bacon or make them sweet with marmalade or cream by adding the filling during the folding of the dough. I made them empty and simply combined them with yogurt. Delicious!
  • 200 ml of lukewarm milk (0,8 cup)
  • 200 ml of lukewarm water
  • 100 ml of oil (0,4 cups)
  • 1 cube of fresh yeast (40 g) (2 bags dry yeast)
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 2 egg whites

  • 2 egg yolks + 1 tablespoon majun
  • about 750 g of flour (26.5 oz)
  • 150 g butter for coating (5.3 oz) 
Follow the procedure

  1. Dissolve the yeast and sugar in 200 ml of lukewarm water, then add the lukewarm milk and oil, the egg whites and finally gradually add the flour and salt. Knead with 700 g of flour, soft and sticky dough. Allow 1 hour to rise covered with plastic foil.
  2. After doubling the volume of the dough, transfer it on a nicely floured surface, add flour to stop it from sticking, knead it very briefly and form a ball.
  3. Then apply oil on the work surface, place the dough and spread it nicely with your fingers in a rectangular size of about 40 by 30 cm.
  4. Coat the open crust with softened butter or margarine. Fold the crust from above to half of the crust (not the whole) with the top side, then coat it with butter on top.
  5. Then fold it completely with the downside of the crust. You will get a long rectangle that you will coat with butter. Then fold the rectangle from left to right and slightly stretch it with your palms and cut it into strips. I cut it in 8 stripes, but I think you can cut the dough in 10 stripes.
  6. Each stripe is twisted with the palms in the opposite direction and the ends are joined together like a bagel.
  7. Place on a baking sheet lined with parchment paper and cover with egg yolks with majun, if desired, you can add sesame seeds. Leave for another 20 minutes and then bake in a preheated oven at 200 C degrees for about 20 minutes.
  8. After baking, coat with butter.
