BAKED AVOCADO WITH EGGS

Wonderful healthy and very tasty breakfast. I usually use avocados for spreads or salads, but this time I tried something completely different. It takes only a few minutes to prepare and about 20 minutes to bake.
Just to mention that avocado was unknown for Macedonians till recent years. Many people hasn't even tried it here, but those who had, fell in love with it immediately, including myself. 
  Ingredients:
  • 1 ripe avocado
  • 2 eggs
  • 2 slices of wholewheat bread
  • spices: bukovska pepper, salt and mint
Preparation:
  1. Slice the avocado in half (nonpeeled) and remove the seed.
  2. Slowly break 2 eggs aside. With a spoon take the egg yolk and place in the hole of one half of the avocado. Repeat with the other slice of avocado. If there is room, add some egg white.
  3. Slightly whisk the remaining egg white and dip the two slices of bread in the egg white.
  4. Place the avocado and bread in a pan covered with baking paper. Sprinkle spices on top of both the avocado and bread and bake at a maximum temperature ( I switched on the fan) for about 15 to 20 minutes until the egg has hardened slightly, but still the egg yolk should remain liquid.
  5. Combine with fresh tomato. Avocado is eaten with a spoon.
