BAKED VEGETABLES IN EARTHENWARE DISHES WITH TOPPING

I really didn't know how to name this recipe, since I invented it :) I make various dishes combining different veggies, I just love veggies, especially with topping. You can add other veggies too, you can also add some white cheese or ricotta in between, variations are endless. The given ingredients are for 2 servings.

 Ingredients:
  • 2 smaller zucchini chopped in thinner circles
  • 1 eggplant chopped in thicker circles
  • 2-3 cloves garlic or garlic in powder
  • a little olive oil
  • about 200 ml tomato sauce
  • 1 small head onions
  • parsley
  • 3-4 tbs sour cream
  • 200 g soft cheese for pizza
  • 1 egg
Preparation:
  1. First, bake zucchini and eggplant in oven. Arrange them on a baking paper, sprinkle garlic and a little olive oil and put them to bake until slightly golden. You don't need to fully bake them.
  2. Transfer them in 2-3 small earthenware dishes or 1 bigger.
  3. Then, chop the onion and fry it in some olive oil, add the tomato sauce and let them fry/boil shortly, at the end add chopped parsley.
  4. Add the tomato mixture in the earthenware dishes and above, add a mixture of sour cream, cheese and egg.
  5. Put them to bake in heated oven at 250 C degrees for about 20 minutes.
