3 FRUITS CAKE

Beautiful light fruit cake that melts in your mouth. I was always very fond of fruit cakes which I later replaced with chocolate cakes and now I'm back again to the light refreshing fruit taste. This cake is medium hard to make, you need to bake 1 biscuit, cook the cream, whip the other cream and chop the fruit. You will need around 1 hour to make it and several hours in the fridge until use.

Ingredients:
 
Biscuit
  • 9 egg whites
  • 30 tablespoons of sugar
  • 1 tablespoon vinegar
  • 2 tablespoons of sharp flour
Filling
  • 9 egg yolks
  • 4 tablespoons of sugar
  • 4 tablespoons of sharp flour
  • 250 ml of milk
  • 3 packs of vanilla sugar (30 g)
  • 250 g butter
  • 500 ml of whipping cream for cakes
  • bananas, strawberries, orange chopped into pieces
Preparation:
  1. Biscuit: make strong snow from the egg whites with sugar and slowly add the vinegar and flour. Cover the baking mold with butter (I used the large pan that comes with the oven), cover it with baking paper and re-cover with butter. Shake the mixture, flatten and bake for about 1 hour at 150 C degrees. Separate the biscuit from the paper and cut into 3 parts in length.
  2. Cream: beat the egg yolks with sugar, add flour, milk and vanilla sugar. Then put to boil to thicken and cool it well. In the meantime beat the butter with a mixer.
  3. After the cream is cooled well, add the beaten butter.
  4. Whip the whipping cream.
  5. Place one crust at the bottom of a long plate, apply a third of the cream, arrange bananas cut into circles, and then apply the whipped cream. 
  6. Cover with the other crust, apply cream, strawberries and whipped cream. 
  7. Put the third crust, the rest of the cream, the oranges cut into circles and whipped cream. 
  8. Cover the entire cake well with a whipped cream and cool it well in the fridge for several hours.
