One more beautiful recipe from our Macedonian winter cuisine. Those who tried it know how delicious this is.
In addition to the traditional ajvar, prepare this relish which is a great supplement to all dishes or you can simply consume it with warm bread and cheese.

  • 5 kg roast peppers (hot and sweet, or as desired)
  • 1 cup sugar
  • 1 cup wine vinegar
  • 3 cups oil
  • several cloves garlic
  • salt to taste
  • black pepper in grains to taste
  • parsley
  1. Clean the peeled peppers from the seeds and tear them in long and thin slices. Place them in a pot of fire and fry for 15 minutes without oil with occasionally stirring.
  2. Then add the sugar and vinegar and fry about 15 - 20 minutes.
  3. At the end, add the oil (preheated, it should be hot), chopped garlic, salt to taste and fry for another half hour. At the end of frying, add chopped parsley.
  4. Collect warm, in hot jars.
