Fanuria is a sweet bread / cake made in honor of Saint Martyr Phanurius (Fanurij), whose feast is celebrated on September 9th and is believed to help fulfill the wishes of people.

The rule for preparing this cake is to be lean and contain 9 ingredients. But most important of all is the one who makes the bread to pray before beginning of preparation, to make a wish for themselves and to wish health, peace and happiness for the family. In this bread you can include marmalade, cinnamon, fruits, nuts, cocoa, etc.

Although there are many recipes on how to make phanuria - there is no strict rule regarding the ingredients except that it should be 9 lean ingredients and that it should be made with love.

This recipe is a bit enriched by making cocoa glaze to make it even more delicious.

  • 500 ml of mineral sparkling water
  • 2 packs of baking powder (20 g)
  • 6 cups of flour
  • 1 tablespoon cinnamon
  • 2 cups of sugar (plus 1 for the glaze)
  • 2 cups of oil (and 2 tablespoons for the glaze)
  • 3 tablespoons of cocoa (and another 50 g for the glaze)
  • 100 g of chopped hazelnuts (half in the dough, half for sprinkling)
  • 1 cup tap water for the glaze

  1. Mix all the ingredients for the dough: mineral water, sugar, flour, baking powder, cocoa, oil, half of the hazelnuts and cinnamon. Mix with a mixer to smooth the mixture. Pour the mixture in a round baking pan of 28-30 cm. It can be baked on baking paper, so you can easily remove it and transfer it to a serving plate.
  2. Bake in a heated oven at 150 C degrees for about 50 minutes.
  3. Before finishing the baking, prepare the glaze: add one cup of water to boil with 1 cup of sugar. When it starts to thicken, add the cocoa previously dissolved in cold water and 2 tablespoons oil. Stir well until the liquid is smooth and free of clumps and let it boil for a while and thickens a bit so it can be applied more easily. The glaze is applied in a hot and liquid state on the baked cake. Sprinkle the hazelnuts above the glaze.
  4. After cooling and hardening the glaze, serve the cake.
  5. Let your wishes be fulfilled!
