There are various ravanija recipes, this is my mom's recipe. There is ravanija with or without coconut, with or without semolina etc. Ravanija is an old traditional dessert which is widely prepared in all countries that were under Ottoman empire. It's one of the most delicious desserts, it's very easy to prepare and a must try sweet.


For the dough:
  • 4 eggs 
  • 12 tbs sugar 
  • 12 tbs oil
  • 12 tbs milk
  • 7-8 tbs flour
  • 1 baking powder (10 g)
  • 100 g coconut flakes
For the sherbet (syrup):
  • 3 cups sugar
  • 2 cups water
  • 1 vanilla sugar (10 g)
***1 cup is 250 ml measurement

  1. Mix eggs and sugar with a mixer. Then add milk, oil, flour, baking powder and coconut. Mix until the mixture is even. Put in a pan size 28 or 30 and put in the oven to bake at 200 C degrees for about 25 minutes. Once you bake the dough, leave to cool.
  2. For syrup: Put sugar, water and vanilla sugar to boil in a pot. When the syrup is ready, pour on previously cooled dough.
