I tried these scones at my mom's friend, I was thrilled how good they were, so I immediately asked for the recipe and I made them yesterday. They turned out great, I must have eaten 7 till now :) They are very easy and fast to prepare.
My mini potato scones
  • 600 g boiled, cooled and mashed potatoes
  • 600 g flour
  • 220 ml oil
  • 1 flat tsp salt
  • 1 tsp vegetable seasoning (Vegeta)
  • 1 activated yeast (40 g cube diluted in 100 ml water and 1/2 tsp sugar)
  • 1 egg and sesame seeds for coating
  1. First prepare potatoes, you'll need 600 g of potato puree.
  2. While you boil potatoes, prepare the yeast, dissolve it in 100 ml lukewarm water and a little sugar, and leave to activate.
  3. Then, knead dough from all the ingredients and leave dough to rest a little. 
  4. Divide dough into two parts and roll out a crust from each part with a thickness of 1 finger. 
  5. Cut circle forms with a glass and line them on a baking tray aligned with baking papers.
  6. Coat scones with egg and strew sesame seeds on top. 
  7. Bake in preheated oven at 220 C degrees until they get a nice rosy color.
