FRIED SLICES OF BREAD WITH EGGS

We call them "przheni lepcinja so jajca" or "przhenici" :) Very very famous food in Macedonia, usually served for breakfast. This is one of the best ways to use stale bread. The best is if bread is two days old.
Ingredients:

  • 12 slices bread
  • 4-5 eggs
  • 50 ml milk or yogurt
  • salt to taste
  • oil for frying

Preparation:

  1. Cut bread into slices thick as thumb.
  2. Place eggs in a bowl and mix with fork or wire. Add salt. 
  3. Slowly add the milk.
  4. Mix all well until mixture becomes pale yellow.
  5. Heat oil. Deep each slice of bread in the mixture on both sides and immediately put to fry in hot oil. Turn them on both sides until slightly flushed. Fry the remaining bread slices. Add more oil if necessary.
  6. Put them on kitchen paper to drain excess oil.
  7. Serve with yogurt and cheese for breakfast or dinner.
NOTE: You can also put bread to bake instead to fry. Align on baking paper coated with oil and put to bake in preheated oven at 200 C.
