I love spinach in every form. I usually prepare this dish in a pot, this time I tried it in a pan. Both ways are great, but the pan looks amazing when you remove it from the oven, right?
The eggs I used are from the village, same is the spinach - all natural.

  • 500 g spinach- cleaned, chopped and softened in a hot water
  • 1 onion
  • 2 handful of rice
  • 1 carrot
  • 1/2 tbs vegeta
  • oil
  • 1/2 tbs paprika
  • 3-4 eggs
  1. Fry onions with some oil in a pan, add spinach and fry until the spinach is soften.
  2. Add previously finely chopped carrot.
  3. Add the mushrooms.
  4. Finally, add rice and continue to fry until rice becomes translucent.
  5. Pour hot water to cover the spinach, add spices and salt, mix and place the pan in the oven.
  6. Bake for about 30 minutes at 200C.
  7. Before the end, add the eggs on top and return the pan in the oven to bake for 5 minutes.
  8. Serve hot with sour cream or fermented milk.
