FILO PASTRY PIE WITH SPINACH, EGGS AND CHEESE

This recipe is a little hard for me to write, because when I made this pie yesterday, I didn't follow any instructions, nor I measured anything. I just "felt" the ingredients and combined them. I'll try to write the recipe as much precisely as I can, I promise :) The pie turned out great and had one piece the next day for breakfast, it was still good.
 

Ingredients:
  • 500 g package filo pastry (17 oz)
  • 200 g ricotta cheese (7 oz)
  • 200 g white (feta) cheese (or 1 kind of cheese) (7 oz)
  • spinach as much as you want (I used silverbeet)
  • 2 pieces spring onions (only the green parts)
  • 4 eggs
  • 1 cup milk or plain yogurt
  • 1 sachet baking powder (10 g)
  • 3 tbs flour
  • 1/2 cup vegetable oil
  • 1 tsp salt


Preparation:
  1. First fry chopped onions and spinach on a little oil until they soften. Add salt.
  2. Mix eggs well, add milk, oil, salt, baking powder and flour and mix nicely.
  3. Mix 2 cheeses together. 
  4. Heat the oven and grease the pan. 
  5. Place 2 layers of the filo pastry on the bottom of the pan. Sprinkle from the eggs mixture. This mixture is sprinkled on every layer. 
  6. Cheese is applied on every third layer.
  7. And spinach is applied in the middle.
  8. Leave some of the egg mixture for the end and pour evenly on top. 
  9. Bake at 180 C (356 F) degrees for about 40 minutes or until golden color.
