We don't always have time to knead and to spend hours in the kitchen. So, using filo or ready filo dough for preparing maznik or zelnik is the best. Your pie will be ready in no time. Just to make clear-preparing the dough from scratch is always no.1 thing, but this alternative is also a good replacement when you don't have much time or you're just too hungry to wait :)


  • 500 g filo layers for pie (thicker, about 15 pieces in one pack)
  • 500 g ricotta cheese (izvarka, urda)
For the filling:
  • 1 cube of yeast (40 g)
  • 1 teaspoon of salt
  • 1 cup of sparkling mineral water (200 ml)
  • 1 tablespoon sugar
  • 1 cup oil (150 ml)
  • 3 tablespoons of flour
  1. Mix ingredients and leave some time to activate the yeast. This mixture will be used to apply on the layers.
  2. Spread one layer and apply from the filling. Sprinkle ricotta on one side of the layer and roll it in a roll and immediately place it in a form of a snail in the middle of the baking pan, which should be coated with oil. 
  3. Repeat the procedure with the rest of the layers continuously attaching each roll on the previous one. Be careful to leave a little bit from the filling to pour over the whole maznik when finished.
  4. Put to bake at 200 C degrees for about 25 minutes (depends on the oven).
