Delicious chocolate cake, it's one of the best homemade chocolate cakes I've tried so far. True chocolate lovers will immediately wish to prepare it. What I like in this cake is that yolks are cooked, I don't like recipes where egg yolks stay uncooked, that's a little scary for me :)
Filling 1:
- 100 ml of milk (possibly water)
- 100 g cocoa
- 200 g sugar
- 100 g cooking chocolate
- 1 tbs butter
- 8 egg yolks
Put milk, cocoa and sugar to boil on fire. Add chocolate and butter, let it boil a bit and add yolks in the end one by one and mix well. Put aside to cool. Separate 3 tablespoons of this filling, you'll need them later for the dough.
Filling 2:
- 1 butter (250g) (minus 1 tbs which you've used in filling 1)
- 250 g sugar in powder
Mix well with mixer. Add this mixture in the first filling after cooling and mix well to unite well both fillings.
Dough:
- 8 egg whites
- 200 g of sugar
- 3 tablespoons flour
- 5 tablespoons bread crumbs
- 3 tablespoons of the first filling
- a little baking powder
- 8 tablespoons of crushed walnuts / almonds
Mix egg whites and sugar with a mixer. Then gradually add the rest of the ingredients and mix with a wooden spoon. Bake dough in a quartered pan. When cool, cut into 3 parts. Add filling over each part. Decorate as desired. This time I decorated the cake with white cream on top.
