At first, I have to say that if you want to eat really good kebapi, you have to visit Macedonia and eat them in a good traditional restaurant. If you can't do that, then, here is a recipe. Eating kebapi is a tradition in Macedonia. They go excellent with onions and Bukovska pepper.

  • 1 lb lean ground beef  (little less than 500 gr)
  • 1 lb lean ground lamb (little less than 500 gr)
  • 3 large cloves garlic
  • 4-5 sprigs parsley (2 tbsp finely chopped)
  • 1 small yellow onion (1/2 cup finely chopped)
  • 1/2 tsp baking soda
  • 1/4 cup hot water
  • salt and pepper for taste

  1. Mix the minced meat with your hands, gradually add spices. Allow the mixture to stand for several hours, then form kebapi.
  2. Bake kebapi on a charcoal grill for 5-7 minutes, if cooking on electric grill, bake 10 minutes. During baking, it's enough to turn them 2 times.
Serving necessarily goes with finely chopped onions and bukovska pepper.
