I dedicate this article to my second favorite wild green in the world – shtavelj.
Every early spring in Macedonia, nature quietly offers one of its freshest and most underrated gifts – wild dock, known locally as shtavej or shtavelj (штавеј или штавељ).
For generations, people have been gathering these wild greens from mountains, meadows, and village surroundings. It is one of the first plants to appear after winter, bringing a refreshing, slightly sour taste to traditional Macedonian cuisine.
I remember my grandma picking shtavelj every spring and used it to make the most delicious zelnik.
You can easily use it as a substitute for spinach or chard in many recipes.
What Is Shtavelj (Штавељ)?
Shtavelj, botanically known as wild dock (Rumex obtusifolius), is a leafy green plant that grows naturally in many parts of Macedonia, especially in clean, untouched areas.
Its leaves are larger and slightly firmer, and when young, they have a pleasant tangy note that gives dishes a unique character. That gentle sourness is what makes shtavelj special. It adds depth to simple meals and turns everyday food into something memorable. In traditional cooking, it has always been valued for its simplicity and versatility. It is easy to find in nature and adapts beautifully to many dishes.
In fact, shtavelj can fully replace spinach. Any recipe made with spinach can be prepared with it, bringing a fresher and more vibrant taste.
