AROMATIC ROASTED PUMPKIN WITH HONEY, NUTS AND DRIED FRUITS

Pumpkin is one of the most beautiful autumnal delights. For me, roasted pumpkin is the best and healthiest variant, especially in this form with added honey, nuts and dried fruits spiced with vanilla and cinnamon. This is a great substitute for any dessert, I guarantee.

Ingredients:

  • 1 pumpkin sliced and cleaned from seeds (about 10 pieces)
  • 1 tablespoon of honey for each piece
  • 1 tablespoon chopped nuts and hazelnuts for each piece
  • 1 tablespoon mixture of dried cranberries and raisins for each slice
  • 4-5 tablespoons rum to dip the dried fruit
  • 1 tsp cinnamon for whole pumpkin
  • 1 tbs of vanilla sugar for whole pumpkin
Preparation:
  1. Place the sliced and cleaned pumpkin on a baking tray lined baking sheet and bake at 220 C degrees for about an hour and a half or until pumpkin is softened and the edges begin to darken. Each pumpkin requires a different baking time.
  2. Then remove the pan from the oven and fill each piece with dried fruit pre-soaked in rum and chopped nuts and hazelnuts. Sprinkle vanilla sugar and cinnamon and pour 1 tablespoon full of honey on each piece.
  3. Return the tray to the oven for a few more minutes to slightly roast the added ingredients and melt the honey.
  4. Cheers.
