WHITE CHEESE AND OLIVE SCONES

Golden, soft, and full of flavor, these cheese and olive scones are a true comfort food. Popular across the Balkans, they combine the creaminess of white cheese with the rich taste of butter and the briny kick of olives. Topped with sesame seeds, they’re not just tasty, but also beautiful to serve. Perfect with a cup of yogurt, as a side for soups, or simply enjoyed warm straight from the oven.

White cheese and olives scones

Ingredients:

  • 1 egg

  • 300 g white cheese (or another crumbly cheese)

  • 250 g butter (grated or finely chopped)

  • 100 g pitted olives (finely chopped)

  • 500 g all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon baking powder

For brushing:

  • 2 egg yolks

  • 1 tablespoon mayonnaise

  • Sesame seeds

Preparation:

  1. In a large bowl, mix flour, salt, and baking powder. Add the egg, crumbled feta, grated butter, and chopped olives. Combine well with your hands until the dough starts to form.

  2. Knead for about 7–8 minutes, until smooth and elastic. Avoid adding extra flour.

  3. On a floured surface, roll out the dough to about 1.5 cm thick. Cut into rounds with a small cutter or glass.

  4. Place the scones on a baking tray lined with parchment paper.

  5. Whisk egg yolks with mayonnaise and brush over the tops. Sprinkle with sesame seeds.

  6. Bake in a preheated oven at 190 °C (375 °F) for about 20 minutes, until golden brown.

  7. Serve warm and enjoy!

Serving idea: These scones taste amazing with plain yogurt or sour cream.
Tip: Use both green and black olives for extra depth of flavor.
