STUFFED RED PEPPERS WITH CREAMY CHEESE

Stuffed red peppers

📝 Ingredients:

  • 4 red roasted peppers (preferably sweet ones)

  • 1 medium carrot, grated

  • 1 onion, finely chopped

  • 1 small hot green pepper, chopped

  • 200g thick strained yogurt

  • 350g white cheese crumbled

  • 70g hard yellow cheese, grated (e.g. kaškaval or similar)

  • 1–2 tbsp olive oil

  • 1 tsp dried oregano

  • Fresh parsley, finely chopped

  • A spoon of cream cheese or any creamy spread cheese (optional but amazing)


🍴 Instructions:

  1. Sauté the filling base
    In a pan, heat a tablespoon of olive oil. Add the grated carrot, chopped onion, and hot green pepper. Sauté for a few minutes until soft and fragrant.

  2. Prepare the filling
    In a bowl, combine the sautéed mix with strained yogurt, crumbled white cheese, grated yellow cheese, a drizzle of olive oil, and oregano. Mix well to get a creamy, flavorful stuffing.

  3. Prepare the peppers
    Carefully slice each red pepper lengthwise, without detaching the stem. Remove the seeds and veins gently, keeping the peppers whole and boat-like.

  4. Stuff and bake
    Fill each pepper with the creamy cheese mixture. Place them in a baking dish lined with parchment paper. Optionally, top each one with a bit of grated cheese and a small dollop of creamy cheese.

  5. Bake
    Bake at 180°C (350°F) for about 20–25 minutes, or until the tops are golden and the filling is set.
