This Bukovska pepper olive oil dip is a simple yet flavorful appetizer inspired by traditional Macedonian ingredients. Made with traditional red pepper flakes from Bukovo, rich olive oil, aromatic herbs from our mountains, bieno sirenje, and crushed dried tomatoes, it brings together familiar Balkan tastes in a rustic, homemade way. It’s perfect for serving with fresh bread, as part of a meze platter, or as a quick addition to any family gathering. This recipe requires no cooking, just quality ingredients and a few minutes of preparation.
🧴 Ingredients:

¾ cup extra virgin olive oil

1½ tablespoons wine vinegar or apple vinegar

½ cup finely grated hard cheese (bieno sirenje or parmesan if not available in your place)

2 tablespoons finely chopped dried tomatoes (rehydrated in warm water if very dry)

1 tablespoon finely chopped black olives (preferably homemade or cured)

1 tablespoon finely chopped fresh rosemary (or substitute with thyme or basil)

2 tablespoons finely chopped fresh parsley

2–3 garlic cloves, crushed

1–2 teaspoons Bukovo (crushed red pepper flakes)

1 tablespoon freshly squeezed lemon juice or a few drops of red wine vinegar

Salt to taste (adjust based on saltiness of the cheese and olives)
🥣 Preparation:

In a wide, shallow serving bowl, pour in the olive oil and vinegar. Stir gently to combine.

Add the grated cheese, chopped dried tomatoes, olives, rosemary, parsley, and crushed garlic.
