Poppy seed roll is my favorite thing from when I was a kid, although in recent years I rarely eat it. As for something I haven't made in a long time, it came out wonderfully, both in appearance and in taste. From this dose I made 2 rolls and I baked them at the same time in 2 long-baked molds. I did one with the poppy seed filling, the other with walnuts filling. I will write the recipe for walnut rolls in addition. The given amount of the filling is for 1 roll, for 2 you will need to double the ingredients or put a filling according your taste.
For the dough you will need:
For filling:
- 600 g of soft flour
 - 4 yolks
 - pinch of salt
 - 100 g of sugar
 - 120 g of butter (softened at room temperature)
 - 1 lemon peel
 - 250 ml of lukewarm milk
 - 40 g of fresh yeast
 
- butter for coating the molds
 - 1 yolk for coating the rolls
 
For filling:
- 300 g of crushed poppy seeds
 - 100 g of sugar
 - 1 teaspoon ground cinnamon
 - 250 ml of milk
 
- Beat the egg yolks, sugar, butter and lemon bark with a mixer until foamy.
 - Dissolve the yeast in 100 ml of lukewarm milk.
 - Gradually add flour and pinch of salt to the beaten egg yolks mixture, add the dissolved yeast and gradually add flour and the remaining milk. Mix with a mixer, and in the end, knead it with your hand. The dough should be soft and not sticky.
 - Allow the dough to rise for about 1 hour.
 - During that time, make the filling. With hot milk, pour poppy and sugar and add cinnamon. Mix well.
 - Divide the raised dough into two parts and roll out thin crusts a floured surface with a thickness of 3-4 mm.
 - Apply the filling over the entire surface (don't apply it to the very ends, leave about 1 cm margin) and roll the crust carefully into a roll. While wrapping it, remove the flour from the crust.
 - Put the roll in the mold previously coated with melted butter and let it rise for another 40 minutes. Before baking, coat with mixed egg yolk.
 - Bake at 180 C degrees for about 40-50 min. If necessary, put baking paper from the top if you see the rolls get color easily.
 - After baking and cooling, you can sprinkle powdered sugar on top.
