Great recipe for all chicken food lovers. Juicy and mouth melting.

  • 4 chicken breast fillets
  • 4 slices prosciutto or bacon
  • plain flour
  • 1 egg beaten lightly
  • 1 tbs milk
  • ¾ cup bread crumbs
  • 1 teaspoon fresh oregano, chopped finely
  • a little thyme
  • 1 teaspoon paprika
  • vegetable oil, for shallow frying
Lemon chive sauce:
  • ½ cup sour cream
  • 300 ml cooking cream
  • 1 tbsp grated lemon rind
  • 1 tbsp finely chopped fresh chives (or spring onions)

  1. First, add a little vegetable seasoning and black pepper on the chicken fillets.
  2. Then, wrap each chicken fillet in a piece of prosciutto or bacon, it will make chicken juicier and softer. Use longer and thinner pieces of meat. If needed, stick a toothpick to keep it all together.
  3. Toss fillets in flour, shake away excess flour. 
  4. Dip wrapped fillets into mixed egg and milk, toss in combined bread crumbs, paprika and herbs.
  5. Heat oil in large pan. Cook fillets on both sides until browned lightly and cooked through, drain on kitchen paper. Serve fillets with warm lemon chive sauce in addition of steamed vegetables if desired.

Lemon chive sauce: Mix creams and lemon rind in medium saucepan, stir until heated through. Stir in chives. Pour over the chicken fillets.
