Taratur is a traditional Macedonian meal, usually served as an appetizer or salad. It generally includes yogurt or fermented milk, cucumbers and garlic. The following recipe is for 4 people.


• 2 cucumbers (about 12 cm)
• 500 g yogurt
• 1 tablespoon salt
• 1/2 tablespoon vinegar
• 3 cloves garlic (crushed or powdered)
• 50 g nuts (optional)
• 10-20 g olive oil (optional)
• parsley (for decoration, optional)

  1. Wash cucumbers, then peel. Chop them finely. Put them in a bowl and add salt. 
  2. Pour yogurt and add garlic. Mix well. Add vinegar.
  3. Add oil and crushed nuts optionally. Put the mixture into a large serving bowl. Decorate with parsley.
Serve cold. Combine with Macedonian mastika.
